Watermelon Feta Salad

Serves 5

Ingredients:

  • ¼ cup olive oil
  • 2 Tbs. red wine vinegar
  • ½ tsp. salt
  • 3 cups cubed seedless watermelon
  • 1 cup crumbled low fat feta cheese
  • 1 cup finely chopped cucumber
  • ½ cup chopped fresh mint
  • ½ cup thinly sliced red onion

Directions:

  1. In a small bowl, whisk together olive oil, red wine vinegar, and salt to make the dressing.
  2. In a large bowl, add watermelon, feta cheese, cucumber, mint, and onion. Add dressing and toss to coat.
