Watermelon Feta Salad
Serves 5
Ingredients:
- ¼ cup olive oil
- 2 Tbs. red wine vinegar
- ½ tsp. salt
- 3 cups cubed seedless watermelon
- 1 cup crumbled low fat feta cheese
- 1 cup finely chopped cucumber
- ½ cup chopped fresh mint
- ½ cup thinly sliced red onion
Directions:
- In a small bowl, whisk together olive oil, red wine vinegar, and salt to make the dressing.
- In a large bowl, add watermelon, feta cheese, cucumber, mint, and onion. Add dressing and toss to coat.
