Valentine’s Day Recipe: Raspberry Chia Pudding
‘Tis the season to celebrate love, right? Show your body some affection with this lovely Valentine’s Day snack or dessert!
Illinois CancerCare’s Oncology Dietitian, Karen Bevers, RDN, CSO, LDN, shares, “This recipe features two of my favorite high fiber foods – chia seeds and raspberries! Fiber is great for our digestive health, blood sugar management, and helping with weight management.”
The American Institute for Cancer Research recommends aiming for at least 30 grams of dietary fiber per day. This recipe meets almost half of the daily fiber recommendation.
Enjoy chia seed pudding for breakfast, as a snack, or top with some chocolate chips to make a healthy dessert!
RASPBERRY CHIA PUDDING
Servings: 2
Ingredients:
- ½ cup fresh or frozen raspberries
- ¾ cup almond milk (or milk of choice)
- 1 Tbs. maple syrup
- ½ tsp. vanilla extract
- ¼ cup chia seeds
Directions:
- Blend the raspberries, milk, maple syrup, and vanilla extract together in a blender until smooth.
- Pour into a bowl then add the chia seeds and whisk together until well combined.
- Place bowl in the fridge to set for at least 1 hour, or overnight.
- Add your favorite toppings such as chocolate chips or cacao nibs, crushed nuts, Greek yogurt, or additional raspberries. Enjoy!
